The Properites of an AD/Ex200x contact include a check box for 'Use MAPI Rich Text Format' (on the Exchange Advanced tab).
Default mapping: mapirecipient=~mapi~
On an Ex200x to Ex200x sync, the ~mapi~ usage should set the destination attribute to match the source attribute value.
On an Ex5.5 to Ex200x sync, if the source is a mailbox the destination attribute should be set to 'TRUE' otherwise it's set to 'FALSE'.
Alternatively, you may use a custom mapping to set this value to 'TRUE' (checked) or 'FALSE' (unchecked) for all synced contacts: (Note, the TRUE/FALSE mapped value must appear in all caps.)
Exchange 2003, 2007, 2010
mapirecipient=TRUE (checked)
or
mapirecipient=FALSE (unchecked)
In Ex2007/Ex2010, there is a third option 'User Default Setting' . This essentially sets the mapirecipient value to <not set>
To accomplish this in your connection, use a blank mapping like this:
mapirecipient=
